Handmade Strozzapreti with Wild Rapini and Smoked Bacon

 Handmade strozzapret with omnivore salt

1 lb fresh handmade strozzapreti
1 bunch wild rapini (2-3 inches of the tip)
2 slices smoked bacon
5-6 garlic cloves, thinly sliced
1 cup extra virgin olive oil
A pinch of Omnivore Salt
A pinch of red chili flakes
 
Heat 1/2 cup of olive oil in a large sauté pan, add the garlic, the red chili flakes and cook until the garlic is golden. Then add the wild rapini, two spoons of water and sprinkle Omnivore Salt. Toss until just tender.

Meanwhile, cook the bacon in a heavy skillet, over medium high heat, until crisp. Cut into 1" pieces and set aside on paper towel.

In a large pot, boiled the strozzapreti until al dente. 

Stir and mix together adding a little reserved pasta water, if needed, to help bring the mixture together. 


Finish with extra virgin oil and your favorite aged cheese.
